Late autumn is a dream time for those who love to cook (and to eat of course). What I wanted to nominate was my favourite autumn fruit of all time, the quince.
Yes, this ancient fruit with its stunning gently perfume and pale yellow skin transforms into a rich, textural dream simply by simmering in water, sugar, spices, ginger and lime juice. It's almost magical!
So I'm sharing a super-easy recipe for Poached Quinces with Ginger, Lime and Cardamom.
Get to it this weekend as quinces will soon start to disappear (until next autumn)!
