Recipe of the week: Cheese and za’atar kataifi parcels

These delicious middle eastern influenced taste sensations are devoured in a blink of an eye when prepared and served in our Team Building events, the World of Food and Team Culinary Challenge.

INGREDIENTS:
150 g haloumi, grated
150g feta, crumbled
80 g (1/4 cup) pine nuts, toasted
2 tablespoons chopped parsley
180 g kataifi pastry
125 g melted butter
Za’atar

METHOD:
Preheat oven to 180°C.
Mix cheeses, nuts and parsley together.
Form into 20 small balls, approx 2 cm.
Take pastry and separate into strands of 10–12 pastry lengths.
Place one ball of cheese on each pastry section and roll up enclosing filling entirely.
Place on a lined baking tray.

Brush pastries with melted butter and bake for 20-25 minutes until crisp.
Pile kataifi parcels onto a platter.
Sprinkle with za’atar and serve.
